An easy Blackberry Jam Recipe for Breakfast or Anytime

We grew fruits and vegetables around our property this Spring and Summer. My family has been growing blueberries for three generations, starting with my grandfather in Florida. He did it for over 30 years.

Growing fruits and vegetables can be a helpful life skill to teach your children. You enjoy something more when you take the time to plant, nurture, and grow something. It's fun when you get to eat something you grew in your backyard. Every year, my family grows blueberries and apples. Sometimes, Lovie will take part of our annual harvest and bake something nice with it.

The growing season in New England has since passed this year, but that doesn't mean you've missed your chance to try making new recipes. There are plenty of new things to try. Dragonfly Cakes founder Odette D'Aniello has some great blackberry recipes that will boost your breakfast or satisfy your sweet tooth. It all depends on the time of day and what you're in the mood for.

One recipe Odette provided was an easy one for a blackberry jam. Blackberries don't have a long shelf-life. so it's important to have ways to preserve them. Odette's jam is a great way to enjoy the morning with some toast or a biscuit.

"It's perfect for peanut butter and jelly sandwiches or as a topping for pancakes," she said.

I gave the recipe to Lovie, the chef and baker of the family. She told me how fast and easy it was to make. To make the jam, wash about 4 cups of berries, put them in a pot, and simmer with 1/4 cup of sugar. You can use more or less sugar, depending on how much "sweet" you want in your jam. When the berries start to break down, stir in one tablespoon each of flax meal and chia seeds. The mixture will thicken. Odette says the jam will last in the refrigerator for up to a week. I would say it would last a little longer than that.

The blackberry jam came out great, not that I doubted Odette's recipe or Lovie's skills. I enjoyed some toast topped with the jam on a couple of mornings when I was ready to start my day. As I said before, the jam is easy enough to make. It makes for a great topping, and it's not too sweet. It's a delicious way to use up some blackberries you have around the house. If you've grown them yourself, you'll enjoy it even more.

Blackberries don't Last Long

Blackberries are delicious, but they don't last very long. If your shopping for them, check the packages, especially the bottom. They tend to develop mold. To prevent this,  Odette freezes blackberries in gallon bags and pulls them out to thaw as needed.
