Scratch Grocery Pancakes
Recently, I was approached by "Scratch Grocery" to try their plant-based pancake mix. "Scratch", based in Hallendale Beach, FL, is a company that sells dairy-free, soy-free products. Pancakes have always been a breakfast favorite of mine, so I thought I would give it a shot.
The package arrived, and I must say it looked a little small. It's a 10 oz package and we're a family of 5. Then again, we're not eating the mix, so I reserved my judgement until after I saw how many pancakes I would get out of it. Then again, maybe you are eating pancake mix if you're pressed enough for time.

Making the batter couldn't be simpler. Take one cup of pancake
mix and 1/2 cup of sparkling water, mix in a bowl, and cook mixture in a pan on medium heat. Turn when you see the bubbles. One batch of this mixture will get you 2 or 3 pancakes. I used the entire package on this glorious morning and got 16 when I was done.The morning's pancakes came out good. Some were a little overcooked, but that was due to a user error (me). You need to keep a close eye on them when cooking as they are thinner than what you're used to seeing when it comes to pancakes. They tasted good, too. What I liked most about this product was how easy it was to mix the batter. All you need is two ingredients. This is a product you can make any day of the week. You don't need to worry about having enough eggs or oil. Again, I used the entire package on that morning, and all I needed was a bottle of sparkling water.

Anything Wrong with it?
On the negative side, the pancakes came out a little thin. I'm used to the thick, hearty pancakes that come from a nice, viscous batter, but it didn't take away from the taste. Scratch Grocery makes a good product that is easy and quick to make. If you're really pressed for time, your kids can just grab one off the plate and eat it on their way to school.

There was also a french toast mix that came with my package. I haven't tried that one yet, but it will be interesting to see what happens when I combine my culinary skills with Scratch's vegan product. They also sell frying mixes for chicken and fish. Products can be found in stores throughout the eastern United States, especially along the Gulf Coast. For New England mommies and daddies, the only place to purchase in a brick-and-mortar store was in Hartford, CT. Overall, Scratch does make a good product when it comes to pancakes. I hope to see a thicker, heartier product come out in the near future, or a bigger package to have more pancakes for more people. Despite all that, Pancakes from Scratch is a product that's worth trying.
